
Winter Ops Cream Cheese & Everything Bagel Bites
These delightful, chewy bagel bites, adorned with a savory everything seasoning, are perfect for a festive brunch or a satisfying snack. Their compact size makes them easy to manage, while the creamy cheese filling ensures everyone gets a rich, flavorful bite.

In a large bowl, combine warm water, yeast, and sugar. Let stand for 5 minutes until foamy.

Add flour and salt to the yeast mixture. Mix with a wooden spoon or stand mixer with a dough hook until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

While the dough rises, prepare the filling: In a small bowl, combine softened cream cheese and chives. Stir until well combined.

Punch down the risen dough and divide it into 24 equal pieces. Roll each piece into a small ball.

Flatten each dough ball into a disk. Place about 1 teaspoon of the cream cheese filling in the center of each disk. Carefully pinch the edges shut to seal the filling inside, reforming it into a ball.

Bring a large pot of water to a rolling boil and add the baking soda. Gently drop 4-5 bagel bites into the boiling water at a time. Boil for 30 seconds per side, then remove with a slotted spoon to a wire rack. Don't crowd the pot.

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Place the boiled bagel bites on the prepared baking sheet. Brush each with beaten egg wash and generously sprinkle with everything bagel seasoning.
