Directions

  1. 1

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy, about 30 seconds.

  2. 2

Melt the unsalted butter in a 10-inch non-stick skillet over medium heat, ensuring the bottom of the pan is evenly coated.

  3. 3

Add the diced red bell pepper, green bell pepper, and yellow onion to the skillet. Sauté for 3-4 minutes, or until the vegetables begin to soften but still retain a slight crispness.

  4. 4

Stir in the crumbled cooked breakfast sausage and cook for another 1-2 minutes, just to heat through.

  5. 5

Pour the whisked egg mixture into the skillet with the vegetables and sausage. Reduce the heat to medium-low.

  6. 6

As the eggs begin to set, gently push the cooked portions from the edges towards the center of the pan with a heat-resistant spatula, allowing the uncooked egg to flow underneath.

  7. 7

Continue cooking and gently folding for 4-6 minutes, or until the eggs are mostly set but still slightly moist. Do not overcook.

  8. 8

Sprinkle the shredded cheddar cheese over the scramble. Cover the skillet for 1 minute to allow the cheese to melt.

  9. 9

Divide the scramble evenly among serving plates and garnish with fresh chives before serving. Serve immediately.
