
Lilo's "Ohana" Pineapple and Ham Skewers
These simple yet satisfying skewers are a nod to Lilo's resourcefulness and the spirit of 'Ohana (family). Perfect for a casual gathering, they combine the sweet and savory flavors of the islands in an easy, grillable format. A quick and delightful appetizer or light meal.

If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.

In a shallow dish or large Ziploc bag, combine the soy sauce, rice vinegar, brown sugar, grated ginger, minced garlic, and red pepper flakes (if using). Whisk until the sugar is dissolved.

Add the cubed ham to the marinade, ensuring all pieces are coated. Marinate in the refrigerator for at least 20 minutes, or up to 2 hours. Do not marinate the pineapple.

Preheat your grill to medium-high heat (375-400°F / 190-200°C).

Thread the ham cubes and pineapple chunks alternately onto the prepared skewers. Typically, 3-4 pieces of each per skewer works well.

Grill the skewers for 3-4 minutes per side, turning occasionally, until the ham is warmed through and has some nice char marks, and the pineapple is slightly caramelized and tender-crisp.
