
Stitch's Mischievous Mango Sticky Rice
Inspired by the playful chaos and tropical setting, this mango sticky rice is a delightful dessert that's both comforting and a little bit adventurous. Sweet, creamy, and bursting with vibrant fruit flavor, it's a dish that brings a smile, much like everyone's favorite experimental alien.

Rinse the glutinous rice thoroughly under cold water until the water runs clear. Soak the rice in cold water for at least 4 hours, or preferably overnight.

Drain the soaked rice and transfer it to a steamer basket lined with cheesecloth. Steam over boiling water for 25-30 minutes, or until the rice is tender and translucent.

While the rice is steaming, prepare the sweet coconut sauce: In a small saucepan, combine 1 1/2 cups of coconut milk, 1/4 cup of sugar, and 1/4 teaspoon of salt. Heat over medium-low heat, stirring until the sugar and salt dissolve. Do not boil.

Once the rice is cooked, transfer it to a large bowl. Pour the sweet coconut sauce over the hot rice and gently fold it in. Cover the bowl and let it sit for at least 30 minutes to allow the rice to absorb the liquid.
