Directions

    In a medium saucepan, whisk together sweetened condensed milk, coconut cream, passion fruit puree, egg yolks, and cornstarch until smooth.

    Cook over medium-low heat, stirring constantly, for 8-10 minutes, or until the mixture thickens significantly and coats the back of a spoon.

    Remove from heat and stir in vanilla extract.

    Pour the warm filling into a heatproof bowl; press a piece of plastic wrap directly onto the surface of the filling to prevent a skin from forming.

    Refrigerate for at least 2 hours, or until thoroughly chilled and set.

    Once chilled, spoon the tropical filling evenly into each pre-baked mini pie crust shell.

    Arrange fresh berries artfully on top of each tart.
