    Add the cold, cubed butter to the flour mixture. Using your fingertips, a pastry blender, or two knives, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

    Pour in the cold buttermilk. Stir with a fork just until the dough comes together. Do not overmix; the dough will be shaggy.

    Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick rectangle. Fold the dough in half, then rotate 90 degrees. Repeat this patting and folding process 2-3 more times to create flaky layers.

    Pat the dough to a 3/4-inch thickness. Use a 2-inch round biscuit cutter to cut out biscuits. Press straight down without twisting to ensure a good rise. Gather scraps, gently re-pat, and cut remaining biscuits.
