A deeply comforting and flavorful ramen that will fuel any hero. The rich, umami-packed mushroom broth is the star, complemented by tender noodles and fresh vegetables, offering a satisfying and wholesome meal.

Directions
- 1
In a large pot or Dutch oven, heat sesame oil over medium heat. Add sliced mushrooms and cook until golden brown and slightly crispy, about 5-7 minutes.
- 2
Add sliced garlic and ginger to the pot and cook for another 2 minutes until fragrant, being careful not to burn the garlic.
- 3
Pour in the vegetable broth, soy sauce, and mirin. Bring the mixture to a simmer, then reduce heat to low, cover, and let it gently simmer for at least 20 minutes to allow the flavors to meld.
- 4
While the broth simmers, prepare the ramen noodles according to package directions. Drain well and set aside.
- 5
If desired, stir in sriracha to the broth for a spicy kick.
- 6
To serve, divide the cooked ramen noodles among four bowls. Ladle the hot mushroom broth generously over the noodles.
- 7
Arrange a handful of baby spinach, two soft-boiled egg halves, strips of nori, and sliced green onions on top of each bowl.
- 8
Garnish with additional sliced red chili for an extra visual pop and a touch of heat, if desired.
- 9
Serve immediately and enjoy the warmth and depth of flavor in every spoonful.
- 10
For a more substantial meal, add cooked, shredded chicken or tofu.
