    Pour in the vegetable broth, soy sauce, and mirin. Bring the mixture to a simmer, then reduce heat to low, cover, and let it gently simmer for at least 20 minutes to allow the flavors to meld.

    While the broth simmers, prepare the ramen noodles according to package directions. Drain well and set aside.

    If desired, stir in sriracha to the broth for a spicy kick.
