In a large pot, combine vegetable broth, dried shiitake mushrooms, ginger slices, smashed garlic, star anise, and cinnamon stick.

Bring to a simmer over medium heat, then reduce heat to low, cover, and let gently simmer for at least 30 minutes, or up to an hour, to allow flavors to meld.

Strain the broth through a fine-mesh sieve, discarding the solids. Return the clear broth to the pot. Stir in soy sauce and rice vinegar.

Bring the broth back to a simmer. Add the fresh udon noodles and cook according to package directions, typically 3-5 minutes, until tender.

In the last 2 minutes of cooking the noodles, add the bok choy and carrot slices to the broth. Cook until vegetables are crisp-tender.
