Directions

    Cook noodles according to package directions. Drain and set aside.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.

    Pour chicken broth into the pot. Stir in soy sauce, rice vinegar, and grated ginger. Bring to a simmer.

    Add bok choy and shredded carrots to the simmering broth. Cook for 3-4 minutes, or until vegetables are tender-crisp.
