Directions
- 1
Cook noodles according to package directions. Drain and set aside.
- 2
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
- 3
Pour chicken broth into the pot. Stir in soy sauce, rice vinegar, and grated ginger. Bring to a simmer.
- 4
Add bok choy and shredded carrots to the simmering broth. Cook for 3-4 minutes, or until vegetables are tender-crisp.
- 5
Return cooked chicken to the pot. Stir in most of the green onions and cilantro, reserving some for garnish.
- 6
Divide the cooked noodles among serving bowls. Ladle the chicken and vegetable broth mixture over the noodles.
- 7
Garnish each bowl with the remaining green onions, cilantro, and an optional hard-boiled egg half and red pepper flakes.
- 8
Serve immediately and enjoy the harmonious blend of flavors.
