In a large bowl, combine ground pork, napa cabbage, minced ginger, garlic, soy sauce, sesame oil, and white pepper. Mix until just combined, being careful not to overmix.

Lay a single dumpling wrapper in the palm of your hand. Place a generous teaspoon of the filling in the center.

Moisten the edges of the wrapper with a little water. Fold the wrapper in half to create a half-moon shape.

Pinch and pleat the edges to seal the dumpling securely. Repeat with remaining wrappers and filling.

Heat vegetable oil in a large non-stick skillet over medium-high heat. Place dumplings in a single layer, flat side down, and cook for 2-3 minutes until bottoms are golden brown.

Add 1/2 cup of water to the skillet, immediately cover, and steam for 5-7 minutes, or until pork is cooked through and wrappers are tender.

While dumplings steam, whisk together rice vinegar, gochujang or sriracha, honey, and grated ginger for the spicy fire sauce.
