
Warrior's Feast Dumplings with Dipping Sauce
Hearty and satisfying, these steamed or pan-fried dumplings are filled with a savory blend of ground pork and aromatic vegetables. Perfect for sharing, they are a true labor of love that pays off in delicious, tender bites. The accompanying dipping sauce adds a tangy and umami counterpoint.

In a large bowl, combine the ground pork, napa cabbage, shiitake mushrooms, green onions, minced garlic, grated ginger, 1 tablespoon soy sauce, 1 teaspoon sesame oil, and white pepper. Mix thoroughly until all ingredients are evenly distributed, but do not overmix.

Prepare a small bowl of water. To assemble a dumpling, place a wrapper in the palm of your hand. Place about 1 teaspoon of filling in the center of the wrapper.

Dip your finger in water and moisten the edges of half of the wrapper. Fold the wrapper over the filling to create a half-moon shape.

Pinch the top center to seal, then create small pleats along the curved edge, pressing firmly to seal the dumpling completely.

Repeat with remaining filling and wrappers. Arrange finished dumplings on a parchment-lined tray, making sure they don't touch.

To steam: Line a bamboo steamer basket with parchment paper or cabbage leaves. Arrange dumplings in a single layer, ensuring space between them. Steam over actively boiling water for 8-10 minutes, or until cooked through and tender.

To pan-fry: Heat 1 tablespoon of neutral oil in a large non-stick skillet over medium-high heat. Add dumplings in a single layer, flat side down, and cook for 2-3 minutes until bottoms are golden brown.

Carefully add 1/2 cup of water to the skillet, immediately cover, and steam for 5-7 minutes, until water has evaporated and dumplings are cooked through. Remove lid and cook for another minute to re-crisp bottoms.

For the dipping sauce: Whisk together rice vinegar, soy sauce, sesame oil, and red pepper flakes (if using) in a small bowl.
