Directions

  1. 1

Prepare all your fillings: cook vermicelli noodles according to package directions and cool. Cook and halve shrimp, shred carrots, slice cucumber, and tear lettuce and herbs.

  2. 2

Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 15-20 seconds, until it becomes pliable but not overly flimsy.

  3. 3

Carefully lay the softened wrapper flat on a clean, damp surface.

  4. 4

Arrange a few pieces of lettuce, a small bundle of vermicelli noodles, a few shrimp halves, some shredded carrots, and cucumber slices near the bottom edge of the wrapper.

  5. 5

Top with a few mint and basil leaves.

  6. 6

Fold the bottom edge of the wrapper over the filling, then fold in the sides firmly.

  7. 7

Roll the wrapper tightly from bottom to top, creating a neat cylinder. Continue with the remaining wrappers and fillings.

  8. 8

For the dipping sauce, combine sweet chili sauce with lime juice and rice vinegar. Stir well.

  9. 9

Optionally, sprinkle the chopped roasted peanuts over the dip or directly on the rolls for added texture.

  10. 10

Cut each summer roll in half on the diagonal for an attractive presentation.

  11. 11

Serve immediately with the sweet chili lime dip.
