
Peacock's Plume Summer Rolls with Sweet Chili Dip
These elegant and refreshing summer rolls are a light and flavorful appetizer, reminiscent of a peacock's beautiful fanned plumage. Filled with crisp vegetables, delicate noodles, and fresh herbs, they are a perfect, vibrant bite to awaken the senses without weighing you down.

Prepare all your fillings: cook vermicelli noodles according to package directions and cool. Cook and halve shrimp, shred carrots, slice cucumber, and tear lettuce and herbs.

Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 15-20 seconds, until it becomes pliable but not overly flimsy.

Carefully lay the softened wrapper flat on a clean, damp surface.

Arrange a few pieces of lettuce, a small bundle of vermicelli noodles, a few shrimp halves, some shredded carrots, and cucumber slices near the bottom edge of the wrapper.

Top with a few mint and basil leaves.

Fold the bottom edge of the wrapper over the filling, then fold in the sides firmly.

Roll the wrapper tightly from bottom to top, creating a neat cylinder. Continue with the remaining wrappers and fillings.

For the dipping sauce, combine sweet chili sauce with lime juice and rice vinegar. Stir well.
