Directions

  1. 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. 2

In a large bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. 3

In a separate medium bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until well combined.

  4. 4

Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix; a few lumps are fine.

  5. 5

Gently fold in the chopped dried apricots and walnuts until evenly distributed.

  6. 6

Pour the batter into the prepared loaf pan and spread evenly.

  7. 7

Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.

  8. 8

Let the loaf cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Slice and serve.
