Directions

    Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

    Add beef cubes and sear on all sides until well browned, working in batches if necessary to avoid overcrowding the pot.

    Remove beef and set aside. Add chopped onion, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes.

    Deglaze the pot with red wine, scraping up any browned bits from the bottom.

    Return beef to the pot. Pour in beef broth. Add bay leaves and dried thyme. Bring to a simmer.
