Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.

Season chicken pieces with salt and pepper. Add to the skillet and brown on all sides, about 5 minutes. Remove chicken and set aside.

Add onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and ginger, cooking for another minute until fragrant.

Stir in cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly.
