Directions

  1. 1

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.

  2. 2

Season chicken pieces with salt and pepper. Add to the skillet and brown on all sides, about 5 minutes. Remove chicken and set aside.

  3. 3

Add onion to the skillet and cook until softened, about 5-7 minutes. Add garlic and ginger, cooking for another minute until fragrant.

  4. 4

Stir in cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly.

  5. 5

Return chicken to the skillet. Add diced tomatoes, vegetable broth, and apricots. Bring to a simmer.

  6. 6

Reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is cooked through and tender.

  7. 7

Stir in green olives and 1/2 cup fresh cilantro. Cook for another 5 minutes to allow flavors to meld.

  8. 8

Taste and adjust seasoning with salt and pepper as needed.

  9. 9

Serve hot over fluffy couscous, garnished with additional fresh cilantro.
