
Viking Breakfast Skillet Feast
A hearty and robust breakfast skillet, fit for a Viking warrior or a growing dragon trainer. This dish is loaded with savory sausage, pan-fried potatoes, and sweet caramelized onions, all topped with perfectly cooked eggs. It’s a complete meal that provides sustained energy for any adventure.

Heat olive oil in a large oven-safe skillet (cast iron works best) over medium heat.

Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage from skillet with a slotted spoon, reserving a tablespoon of fat in the pan.

Add sliced onion to the skillet and cook over medium-low heat, stirring occasionally, for 8-10 minutes, until softened and beginning to caramelize.

Increase heat to medium-high. Add diced potatoes to the skillet in an even layer. Cook, stirring occasionally, for 10-15 minutes, until potatoes are tender and browned.

Stir in smoked paprika and dried thyme. Season with salt and pepper.

Return the cooked sausage to the skillet and toss to combine with the potatoes and onions, spreading the mixture evenly.

Make four wells in the skillet mixture. Carefully crack an egg into each well.
