
Winter Forest Forager's Mushroom & Herb Tart
A rustic and flavorful tart, perfect for a cozy evening. This dish features earthy mushrooms and fragrant herbs enveloped in a creamy custard, all nestled within a flaky puff pastry crust. It's a comforting and elegant main course or a substantial appetizer for your holiday table.

Preheat oven to 400°F (200°C). Unroll the puff pastry onto a parchment-lined baking sheet. Score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.

In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook, stirring occasionally, until they release their liquid and are nicely browned, about 8-10 minutes.

Add shallot and garlic to the skillet and cook for another 2-3 minutes, until fragrant. Stir in thyme and rosemary, then remove from heat and let cool slightly.

In a medium bowl, whisk together eggs, heavy cream, and Parmesan cheese. Season with salt and pepper.

Spoon the mushroom mixture evenly within the scored border of the puff pastry. Pour the egg custard mixture over the mushrooms.
