Directions

  1. 1

Preheat oven to 400°F (200°C). Unroll the puff pastry onto a parchment-lined baking sheet. Score a 1-inch border around the edge of the pastry, being careful not to cut all the way through.

  2. 2

In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook, stirring occasionally, until they release their liquid and are nicely browned, about 8-10 minutes.

  3. 3

Add shallot and garlic to the skillet and cook for another 2-3 minutes, until fragrant. Stir in thyme and rosemary, then remove from heat and let cool slightly.

  4. 4

In a medium bowl, whisk together eggs, heavy cream, and Parmesan cheese. Season with salt and pepper.

  5. 5

Spoon the mushroom mixture evenly within the scored border of the puff pastry. Pour the egg custard mixture over the mushrooms.

  6. 6

Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the custard is set in the center.

  7. 7

Let the tart cool on the baking sheet for 5-10 minutes before slicing. Garnish with fresh parsley before serving warm.
