
Hearty Journey Stew with Root Vegetables
A nourishing and robust stew, perfect for warming up after a long journey or a chilly day. This recipe combines tender chunks of beef with a medley of hearty root vegetables and a deeply flavorful broth, creating a comforting and satisfying meal that simmers to perfection.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef cubes in batches on all sides, then remove with a slotted spoon and set aside.

Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Stir in garlic and cook for another minute until fragrant.

Return the beef to the pot. Stir in diced tomatoes, beef broth, red wine (if using), bay leaf, and dried thyme. Bring to a simmer.

Reduce heat to low, cover, and cook for 1.5 hours, stirring occasionally.
