Directions

  1. 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef cubes in batches on all sides, then remove with a slotted spoon and set aside.

  2. 2

Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Stir in garlic and cook for another minute until fragrant.

  3. 3

Return the beef to the pot. Stir in diced tomatoes, beef broth, red wine (if using), bay leaf, and dried thyme. Bring to a simmer.

  4. 4

Reduce heat to low, cover, and cook for 1.5 hours, stirring occasionally.

  5. 5

Add cubed potatoes and parsnip to the stew. Continue to simmer, covered, for another 45-60 minutes, or until the beef and vegetables are fork-tender.

  6. 6

Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.

  7. 7

Ladle the hearty stew into bowls. Garnish generously with fresh chopped parsley before serving hot.

  8. 8

This stew is even more flavorful the next day, making it a great make-ahead meal.
