This stir-fry delivers a burst of sweet and tangy flavors, much like a certain colorful, multi-legged friend's personality. Fresh vegetables and tender noodles are tossed in a vibrant sauce, creating a satisfying and comforting meal.

Directions
- 1
Cook noodles according to package directions, al dente. Drain and set aside.
- 2
Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat.
- 3
Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
- 4
Add the remaining 1 tablespoon of sesame oil to the wok. Add broccoli, red bell pepper, and carrot, and stir-fry for 3-4 minutes until vegetables are crisp-tender.
- 5
Add minced garlic to the vegetables and stir-fry for another minute until fragrant.
- 6
In a small bowl, whisk together chicken broth, soy sauce, rice vinegar, brown sugar, and grated ginger.
- 7
Pour the sauce mixture into the wok. Bring to a simmer, then stir in the cornstarch slurry.
- 8
Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- 9
Return the cooked chicken and drained noodles to the wok. Toss everything together until well coated with the sauce.
- 10
Garnish with sliced green onions before serving immediately.
