
Mary's Mango-Ginger Spirit Swirl
Capture the whimsical spirit of a certain coven sister with this vibrant and fragrant dessert. Layers of creamy, spiced mango mousse are crowned with a shimmering ginger-lime gel, creating a dessert that's both light and mysteriously satisfying, much like a good laugh.

For the mango mousse: In a blender or food processor, combine the diced mangoes, sugar, lime juice, ground ginger, and cardamom. Process until perfectly smooth.

In a small, microwave-safe bowl, sprinkle gelatin over 2 tablespoons cold water. Let sit for 5 minutes to bloom.

Microwave the bloomed gelatin for 10-15 seconds, or until fully dissolved and clear. Stir into the mango puree.

In a separate, very cold bowl, whip the heavy cream with an electric mixer until medium-soft peaks form.
