Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

In a large bowl, combine the rolled oats, protein powder, ground flaxseed, chia seeds, chopped nuts, dried cranberries, cinnamon, and salt. Mix well.

In a separate microwave-safe bowl, combine the almond butter, honey (or maple syrup), and melted coconut oil. Microwave for 30 seconds, then stir until smooth and well combined.

Add the wet ingredients to the dry ingredients. Stir thoroughly until everything is evenly moistened and comes together.

If the mixture is too dry and crumbly, add water one tablespoon at a time until it holds together when pressed.

Press the mixture evenly and firmly into the prepared baking pan. Use the back of a spoon or your hands to ensure it is tightly packed.

If using, sprinkle dark chocolate chips over the top and gently press them in.

Refrigerate for at least 1 hour, or until firm.

Once firm, use the parchment paper overhangs to lift the slab out of the pan. Cut into 12-16 bars.
