Roman's Reluctant Rendezvous Reuben
Inspired by the often-sarcastic but undeniably loyal taxi dispatcher, Roman Bellic, this Reuben sandwich is a classic comfort, hearty and dependable, just like a cousin you can always call for a ride. It's a quick, satisfying meal perfect for a busy day navigating the urban jungle.

Directions
- 1
In a small bowl, combine mayonnaise, ketchup, horseradish, Worcestershire sauce, and smoked paprika. Season with salt and pepper to taste; stir well to make the dressing.
- 2
Generously spread one side of each rye bread slice with softened butter.
- 3
Heat a large skillet or griddle over medium heat.
- 4
Place four slices of bread, butter-side down, in the hot skillet.
- 5
Evenly layer corned beef on each bread slice in the skillet.
- 6
Top the corned beef with the drained sauerkraut.
- 7
Sprinkle grating of Swiss cheese over the sauerkraut.
- 8
Spread the remaining four slices of bread with the prepared dressing on one side, and place them dressing-side down on top of the cheese layer.
- 9
Cook for 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted and bubbly.
- 10
Carefully transfer to a cutting board, slice diagonally, and serve immediately with dill pickle spears on the side.
- 11
Ensure the internal temperature reaches 165°F (74°C) if reheating cooked corned beef.
