8-Ball's Exploding Rumaki Bites
These dangerously delicious bites are a nod to the incendiary expert, 8-Ball. Sweet, savory, and with a kick, they're the perfect appetizer to get any party started with a bang. Just like a good demolition, timing is everything to get that perfect crisp-tender texture.

Directions
- 1
In a medium bowl, whisk together the soy sauce, dark rum, brown sugar, grated ginger, minced garlic, and red pepper flakes. Add the chicken livers and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- 2
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- 3
Remove chicken livers from the marinade, discarding any excess marinade.
- 4
Take one half slice of bacon and wrap it around one half chicken liver and one half water chestnut. Secure with a wooden toothpick.
- 5
Arrange the wrapped bites on the prepared baking sheet, ensuring they are not touching.
- 6
Bake for 20-25 minutes, or until the bacon is crispy and the chicken liver is cooked through.
- 7
For an extra crispy finish, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
- 8
Serve immediately while still warm, being sure to warn guests about the toothpicks.
