    Trim the crusts off all the bread slices using a sharp knife.

    In a small bowl, combine softened cream cheese with chives, a pinch of salt, and pepper. Mix until well combined.

    For the turkey and cheddar sandwiches: Spread a thin layer of the chive cream cheese mixture on one side of four bread slices.

    Top two of these cream cheese-smeared slices with smoked turkey, then a layer of cheddar cheese.

    Place the remaining two cream cheese-smeared slices on top, forming two sandwiches.

    For the cucumber sandwiches: In another small bowl, mix mayonnaise and Dijon mustard.

    Spread a thin layer of the mayonnaise-mustard mixture on one side of the remaining four bread slices.
