Directions

  1. 1

Cut the pound cake into 1-inch cubes and set aside.

  2. 2

In a small saucepan, combine 1 cup of the mixed berries (preferably strawberries and raspberries), granulated sugar, and water.

  3. 3

Bring to a simmer over medium heat, stirring occasionally, until the berries break down and form a light syrup, about 5-7 minutes.

  4. 4

Remove from heat and stir in the vanilla extract. Let the berry syrup cool completely.

  5. 5

While the syrup cools, prepare the cream cheese layer: In a large bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.

  6. 6

In a separate, chilled bowl, beat the very cold heavy cream until soft peaks form.

  7. 7

Gently fold half of the whipped cream into the cream cheese mixture until just combined. If using, fold in the almond extract.

  8. 8

To assemble the trifle: In a large glass trifle bowl (or individual glasses), begin with a layer of pound cake cubes.

  9. 9

Spoon about one-third of the cooled berry syrup over the cake layer.

  10. 10

Spread one-third of the cream cheese mixture over the berry syrup.

  11. 11

Add another layer of pound cake cubes, followed by one-third of the remaining fresh berries.

  12. 12

Repeat the layering process: pound cake, berry syrup, cream cheese mixture, fresh berries, finishing with the last of the cream cheese mixture.

  13. 13

Top the trifle with the remaining plain whipped cream and arrange the rest of the fresh berries on top.

  14. 14

Garnish with fresh mint leaves. Chill for at least 2 hours before serving, allowing the flavors to meld and the cake to soften.
