    Heat a 8-inch non-stick skillet over medium-low heat and add butter, swirling to coat the pan.

    Add diced bell pepper and onion to the skillet; sauté for 3-4 minutes until softened.

    Pour the egg mixture into the skillet. Let it set for about 30 seconds without stirring.

    Gently push the cooked edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
