In a small bowl, dissolve yeast and sugar in warm water. Let stand for 5 minutes, or until foamy.

In a large bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Mix with a wooden spoon until a shaggy dough forms. Turn onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic.

Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with a clean kitchen towel and let rise in a warm place for 1 hour, or until doubled in size.
