    Mix with a wooden spoon until a shaggy dough forms. Turn onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic.

    Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with a clean kitchen towel and let rise in a warm place for 1 hour, or until doubled in size.

    Preheat oven to 425 degrees F (220 degrees C). Lightly oil a 9-inch deep-dish pizza pan or a cast iron skillet.
