Directions

    In a large bowl, combine warm milk, 1 tablespoon granulated sugar, and yeast. Let stand for 5-10 minutes, until foamy.

    Whisk in the egg, egg yolk, and melted butter into the yeast mixture.

    In a separate bowl, whisk together flour, remaining ¼ cup granulated sugar, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface and knead for 6-8 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

    Punch down the dough and roll it out on a lightly floured surface to ½-inch thickness. Using a 3-inch round cutter and a 1-inch cutter for the centers, cut out donuts and donut holes. Reroll scraps and cut more.

    Place cut donuts on parchment-lined baking sheets, cover lightly with plastic wrap, and let rise for another 30-45 minutes, or until puffed.

    Heat 2-3 inches of vegetable oil in a large heavy-bottomed pot or Dutch oven to 350°F (175°C). Fry donuts 2-3 at a time for 1-2 minutes per side, until golden brown. Transfer to a wire rack set over a baking sheet to drain.

    While donuts cool, prepare the glaze: whisk together confectioners' sugar, milk/cream, and vanilla extract until smooth. Divide the glaze into separate bowls and tint with different food colorings.

    Dip cooled donuts into the colored glazes, allowing excess to drip off. Place back on the wire rack to set. Serve immediately or store in an airtight container for up to 2 days.
