Directions

    Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.

    In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.

    In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until well combined.

    Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined; do not overmix. A few lumps are perfectly fine.

    Gently fold in 3/4 cup of the mixed berries into the muffin batter.

    Divide the batter evenly among the prepared muffin cups.

    In a small bowl, mash the remaining 1/4 cup of berries with 2 tablespoons of sugar to create a chunky swirl mixture.
