Directions

  1. 1

Heat olive oil in a large skillet or pot over medium heat. Add sliced red onion and sauté until softened, about 5-7 minutes.

  2. 2

Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.

  3. 3

Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan.

  4. 4

Add the crushed tomatoes and bring the sauce to a gentle simmer. Reduce heat to low, cover, and let it cook for at least 20 minutes to meld flavors.

  5. 5

Meanwhile, bring a large pot of salted water to a rolling boil. Add the linguine and cook according to package directions, until al dente.

  6. 6

During the last 2 minutes of the pasta's cooking time, stir in the dried seaweed flakes into the pasta water to infuse the noodles with color and flavor.

  7. 7

Drain the noodles, reserving 1/2 cup of pasta water, then toss with butter until well coated.

  8. 8

Increase heat under the calamari sauce to medium. Add the calamari rings and tentacles to the sauce. Cook for 3-5 minutes, just until the pieces are opaque and tender. Overcooking will make them rubbery.

  9. 9

Stir in the fresh parsley and season the calamari sauce with salt and freshly ground black pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water.

  10. 10

Serve the squid and sauce immediately over the green seaweed-infused noodles, ensuring each plate gets a good portion of the flavorful calamari.
