Combine rinsed quinoa and vegetable broth in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork.

Pat chicken breast dry with paper towels. Rub with olive oil, smoked paprika, garlic powder, salt, and black pepper.

Heat a non-stick skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C). Remove from skillet and let rest for 5 minutes before slicing.
