    Heat olive oil in a large non-stick skillet over medium heat. Add red bell pepper and red onion; sauté for 3-4 minutes until softened.

    Stir in minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.

    Add the crumbled tofu to the skillet. Sprinkle with turmeric, black salt (if using), nutritional yeast, salt, and pepper. Cook, stirring occasionally, for 8-10 minutes until the tofu is heated through and slightly browned in spots.

    While the tofu cooks, prepare the chorizo dust: In a separate small, dry skillet, add the finely diced chorizo. Cook over medium-low heat, stirring frequently, for 5-7 minutes until very crispy and rendered of its fat. Remove chorizo with a slotted spoon and drain on a paper towel. Once cooled, it should be brittle enough to crumble into a fine 'dust'.

    Stir in chopped fresh chives and cilantro into the tofu scramble during the last minute of cooking.
