A vibrant and refreshing ceviche bursting with tropical flavors, just like the lively animals in Antonio's room. This dish combines fresh white fish with a medley of fruits, marinated in bright citrus for a spectacular appetizer.

Place the cubed fish in a non-reactive bowl (glass or ceramic). Pour the lime juice and orange juice over the fish, ensuring it is fully submerged.

Cover the bowl and refrigerate for 20-30 minutes, or until the fish turns opaque and flakes easily. Do not over-marinate, or the fish will become rubbery.

Gently drain about half of the citrus marinade from the fish, leaving some liquid for moisture and flavor.
