Directions
- 1
Cook noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking; set aside.
- 2
Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
- 3
Add tofu cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.
- 4
Add the remaining 1 tablespoon sesame oil to the skillet. Add ginger and garlic; stir-fry for 30 seconds until fragrant.
- 5
Add red bell pepper and snow peas to the skillet. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
- 6
In a small bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, sugar, and vegetable broth.
- 7
Return cooked tofu and drained noodles to the skillet with the vegetables.
- 8
Pour the sauce mixture over the noodles and toss to coat ingredients thoroughly. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened slightly and everything is heated through.
- 9
Remove from heat. Garnish with fresh cilantro and toasted sesame seeds before serving hot.
