Directions

    Cook noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking; set aside.

    Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.

    Add tofu cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.

    Add the remaining 1 tablespoon sesame oil to the skillet. Add ginger and garlic; stir-fry for 30 seconds until fragrant.

    Add red bell pepper and snow peas to the skillet. Stir-fry for 2-3 minutes until vegetables are tender-crisp.

    In a small bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, sugar, and vegetable broth.

    Return cooked tofu and drained noodles to the skillet with the vegetables.
