    In a large bowl, whisk together the eggs, heavy cream, smoked paprika, red pepper flakes, salt, and pepper until well combined and frothy.

    Heat the olive oil in a 10-inch oven-safe non-stick skillet over medium heat.

    Add the diced smoked sausage, red bell pepper, green bell pepper, and red onion to the skillet. Cook, stirring occasionally, until the vegetables are softened and slightly charred, about 5-7 minutes.

    Pour the egg mixture evenly over the sausage and vegetables in the skillet. Gently stir to distribute the ingredients.
