Directions

  1. 1

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.

  3. 3

In a separate medium bowl, whisk together the melted butter, milk, egg, and vanilla extract until well combined.

  4. 4

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

  5. 5

Gently fold in the mixed berries. If using frozen berries, do not thaw them first.

  6. 6

Drop spoonfuls (about 2 tablespoons each) of the oatcake mixture onto the prepared baking sheet, leaving about 2 inches between each.

  7. 7

Bake for 15-18 minutes, or until the edges are golden brown and the oatcakes are set.

  8. 8

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

  9. 9

Serve warm or at room temperature with a drizzle of honey if desired.
