Directions

    In a high-speed blender, combine the chopped cucumbers with 1 cup of the cold filtered water.

    Blend on high until completely smooth, about 1-2 minutes, ensuring no large chunks remain.

    Strain the cucumber mixture through a fine-mesh sieve into a large pitcher or bowl, pressing firmly on the solids with a spoon or spatula to extract all the liquid; discard the pulp.

    Add the remaining 1 cup of cold filtered water, fresh lime juice, granulated sugar, fine sea salt, and fresh mint leaves to the cucumber liquid.

    Stir briskly until the sugar and salt are fully dissolved, about 1 minute.
