Sandy's Spiky Seed Snacks
These crunchy clusters are inspired by the adventurous spirit of Sandy. Loaded with healthy seeds, nuts, and a touch of sweetness, they're the ultimate grab-and-go snack for any prehistoric (or modern) excursion. Easy to make and highly customizable!

Directions
- 1
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper, ensuring it lies flat.
- 2
In a large bowl, combine the mixed seeds, chopped almonds or walnuts, and shredded unsweetened coconut. Mix well to distribute evenly.
- 3
In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and sea salt until thoroughly combined.
- 4
Pour the wet ingredients over the dry ingredients in the large bowl. Mix very well with a spatula or your hands until all the seeds and nuts are evenly coated.
- 5
Spread the mixture evenly onto the prepared baking sheet in a single layer. Press down firmly to compact the mixture, which will help in forming clusters.
- 6
Bake for 20-25 minutes, or until golden brown and fragrant. The edges should appear slightly darker and crispy.
- 7
Once baked, remove the baking sheet from the oven and let the mixture cool completely on the pan. This is crucial for achieving crisp clusters.
- 8
Once cooled, break the large slab into smaller, 'spiky' clusters of various sizes.
- 9
Store the spiky seed snacks in an airtight container at room temperature for up to two weeks. Enjoy as a quick energy boost!
