Directions

  1. 1

For the 'earthworms': slice the mushroom caps lengthwise into thin strips, aiming for varying lengths and widths to mimic natural forms. Set aside.

  2. 2

For the wild berry glaze: In a small saucepan, combine the mixed berries, apple cider vinegar, honey or agave nectar, and fresh thyme.

  3. 3

Bring the glaze mixture to a gentle simmer over medium-low heat, stirring occasionally, for 8-10 minutes, until the berries break down and the sauce thickens slightly.

  4. 4

Strain the glaze through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids. Keep the glaze warm.

  5. 5

Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

  6. 6

Add the sliced mushrooms to the skillet. Sauté, stirring occasionally, for 8-10 minutes, or until the mushrooms are tender and have released most of their liquid, then started to brown slightly.

  7. 7

Season the sautéed mushrooms with salt and freshly ground black pepper.

  8. 8

Transfer the 'earthworm' mushrooms to serving plates. Drizzle generously with the warm wild berry glaze.

  9. 9

Garnish with finely chopped fresh chives before serving. This dish is excellent on its own or alongside roasted vegetables.
