
Eep's Edible Earthworm Entree (Mushroom 'Worms' with Wild Berry Glaze)
A playful and surprisingly elegant dish, this entree features earthy mushrooms cleverly prepared to resemble 'earthworms,' sautéed to perfection and finished with a vibrant, sweet-tart wild berry glaze. It's a delightful culinary trick!

For the 'earthworms': slice the mushroom caps lengthwise into thin strips, aiming for varying lengths and widths to mimic natural forms. Set aside.

For the wild berry glaze: In a small saucepan, combine the mixed berries, apple cider vinegar, honey or agave nectar, and fresh thyme.

Bring the glaze mixture to a gentle simmer over medium-low heat, stirring occasionally, for 8-10 minutes, until the berries break down and the sauce thickens slightly.

Strain the glaze through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids. Keep the glaze warm.

Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Add the sliced mushrooms to the skillet. Sauté, stirring occasionally, for 8-10 minutes, or until the mushrooms are tender and have released most of their liquid, then started to brown slightly.
