Directions
- 1
In a medium bowl, whisk together soy sauce, sesame oil, honey, grated ginger, minced garlic, and red pepper flakes to create the marinade.
- 2
Add the cut chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours, allowing the flavors to meld.
- 3
If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
- 4
Preheat grill or grill pan to medium-high heat. Lightly oil the grates or spray the grill pan with cooking oil spray.
- 5
Thread the marinated chicken, red bell pepper, green bell pepper, red onion, and pineapple chunks onto the skewers, alternating ingredients for visual appeal.
- 6
Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp and nicely charred.
- 7
The internal temperature of the chicken should reach 165°F (74°C).
- 8
Remove from grill and let rest for a few minutes before serving. Serve immediately as a hearty, satisfying meal.
