Directions

  1. 1

In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and water until smooth. Adjust water for desired glaze consistency. Set half of the glaze aside for brushing.

  2. 2

In a large bowl, toss the chicken pieces with half of the peanut glaze, ensuring they are well coated. Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers alternately.

  3. 3

Preheat your grill to medium-high heat (375-400°F / 190-205°C). Lightly brush the grill grates with olive oil to prevent sticking.

  4. 4

Place the skewers on the hot grill. Grill for 4-5 minutes per side, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice char marks. The internal temperature of the chicken should reach 165°F (74°C).

  5. 5

During the last few minutes of grilling, brush the skewers generously with the reserved peanut glaze multiple times, allowing it to caramelize slightly.

  6. 6

Serve the skewers immediately, garnished with chopped fresh cilantro or crushed peanuts if desired. They should have a beautiful glossy sheen from the glaze.

  7. 7

These skewers are excellent on their own or served over a bed of fluffy rice or with a side salad. The flavors should be bold and balanced.
