Belt's Berry-Cactus Prickle Pops
A refreshing and whimsical frozen treat that’s as fun to make as it is to eat! These popsicles combine the sweet-tartness of berries with the unique, earthy flavor of prickly pear, creating a vibrant and cooling dessert for any occasion.

Directions
- 1
Combine the mixed berries, prickly pear juice, granulated sugar, fresh lime juice, and a pinch of salt in a blender.
- 2
Blend until the mixture is completely smooth. If the mixture is too thick to pour easily, add water one tablespoon at a time until it reaches a pourable consistency.
- 3
Taste the mixture and adjust sugar or lime juice as needed. The flavor should be balanced between sweet and tart.
- 4
If desired, strain the mixture through a fine-mesh sieve to remove any berry seeds or pulp for a smoother texture.
- 5
Carefully pour the liquid into your popsicle molds, filling each one to just below the rim.
- 6
Insert popsicle sticks into the molds. If using sprinkles or edible glitter, you can swirl them into the molds before freezing for a fun look.
- 7
Place the filled popsicle molds in the freezer and freeze for at least 4-6 hours, or preferably overnight, until completely solid.
- 8
To unmold, run the outside of the molds under warm water for a few seconds. Gently pull on the stick to release the frozen treat.
- 9
Serve immediately and enjoy these vibrant, naturally colorful popsicles.
