Directions

    Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius). Line a baking sheet with parchment paper.

    In a medium bowl, combine the rolled oats, chopped nuts, shredded coconut, brown sugar, and cinnamon. Mix thoroughly.

    Add the melted unsalted butter to the oat mixture and stir until everything is evenly coated.

    Spread the granola mixture in an even layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown and toasted. Let cool completely.

    In a separate bowl, whisk together the Greek yogurt, 1/2 cup of honey, and vanilla extract until smooth.

    To assemble the parfaits, layer about 1/4 cup of the honey yogurt mixture into the bottom of serving glasses.

    Top the yogurt with a layer of cooled granola, then another layer of honey yogurt. Repeat until the glasses are full, ending with a layer of granola.
