Directions
- 1
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- 2
In a large skillet, melt butter over medium heat. Add crumbled breakfast sausage and cook until browned, breaking it up with a spoon. Drain excess fat and set aside.
- 3
In a large saucepan, bring chicken broth to a boil. Gradually whisk in grits. Reduce heat to low, cover, and simmer for 5-7 minutes, stirring occasionally, until grits are thick.
- 4
Stir in milk, garlic powder, onion powder, and cayenne pepper (if using) into the grits. Fold in cooked sausage and 1.5 cups of the shredded cheddar cheese.
- 5
Remove from heat and let cool for 5 minutes. Stir in the lightly beaten eggs, salt, and pepper.
- 6
Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- 7
Bake for 30-35 minutes, or until the casserole is set and the top is golden brown and bubbly.
- 8
Let stand for 5 minutes before serving. Garnish with chopped green onions.
