
Feathered Friend's Caramel Nut Clusters
Inspired by delightful surprises, these sweet and salty caramel nut clusters are a true treat. A rich, chewy caramel encases a medley of crunchy nuts, creating an irresistible bite-sized dessert that’s easy to share.

Line a baking sheet with parchment paper and set aside.

In a heavy-bottomed saucepan, combine the granulated sugar, water, and corn syrup over medium-high heat. Stir until the sugar dissolves.

Bring the mixture to a boil without stirring, occasionally swirling the pan gently, until it reaches a deep amber color (about 320°F / 160°C on a candy thermometer).

Carefully and slowly pour in the warmed heavy cream, whisking constantly. The mixture will bubble vigorously. Continue to whisk until smooth.

Remove from heat and stir in the softened butter, vanilla extract, and 1/2 teaspoon flaky sea salt until fully incorporated.

Add the roasted peanuts and mixed nuts to the caramel, stirring gently until all nuts are evenly coated.

Working quickly, drop spoonfuls (about 1 tablespoon each) of the nut mixture onto the prepared parchment paper, forming clusters.

If desired, sprinkle a little extra flaky sea salt on top of each cluster while the caramel is still warm.

Allow the clusters to cool completely and harden at room temperature for at least 30 minutes, or in the refrigerator for 15 minutes.

Once firm, peel the clusters off the parchment paper. Store in an airtight container at room temperature for up to one week.
