Cook the penne pasta according to package directions in a large pot of salted boiling water until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.

While the pasta cooks, pat the chicken breasts dry and season generously with salt and pepper. Heat olive oil in a large skillet or grill pan over medium-high heat.

Grill or pan-fry the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center (internal temperature of 165°F/74°C). Remove from skillet, let rest for a few minutes, then dice into bite-sized pieces.
