Directions
- 1
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- 2
In a medium bowl, whisk together the flour, baking powder, and salt.
- 3
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 4
Beat in the eggs one at a time, then stir in the vanilla extract.
- 5
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- 6
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- 7
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean. Let cool completely on a wire rack.
- 8
Once cooled, use a small paring knife or cupcake corer to remove a small center portion from the top of each cupcake. Store removed pieces.
- 9
Fill each cored cupcake with approximately 1-2 teaspoons of raspberry preserves. Replace the cored cake piece over the filling.
- 10
For the frosting: In a large bowl, beat the softened butter until creamy.
- 11
Gradually add the confectioners' sugar, beating until smooth. Add 2 tablespoons of milk or cream and vanilla extract; mix until fluffy. Add more milk/cream if needed for desired consistency.
- 12
Divide the frosting into separate bowls and mix in gel food coloring to create vibrant colors (e.g., blue, red, yellow).
- 13
Pipe or spread the colorful frosting onto each cupcake. Decorate creatively.
