
Lord MacGuffin's Mighty Morsels: Hearty Salmon and Greens
Inspired by the rugged Scottish Highlands and the sustenance needed for highland games, this dish features perfectly cooked salmon atop a bed of robust greens, dressed with a bright, herbaceous vinaigrette. It's a meal fit for any chieftain, providing strength and flavor in every bite.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.

Heat the 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Place salmon, skin-side down, in the hot skillet and sear for 3-4 minutes until the skin is crispy.

Transfer the skillet to the preheated oven and roast for 8-12 minutes, or until the internal temperature reaches 145°F (63°C).

While salmon roasts, prepare the vinaigrette: in a small bowl, whisk together apple cider vinegar, Dijon mustard, honey, parsley, chives, and minced shallot. Slowly drizzle in the 1/2 cup extra virgin olive oil, whisking constantly until emulsified.
