Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.

In a separate medium bowl, whisk together buttermilk, oil, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually stir in the hot coffee until the batter is smooth and slightly thin.

Divide half of the batter between the two prepared cake pans. Sprinkle half of the crushed chocolate sandwich cookies evenly over the batter in each pan. Pour the remaining batter over the cookies.
