Directions

    Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with non-stick cooking spray.

    In a large bowl, whisk together eggs and milk until well combined and slightly frothy.

    Stir in shredded cheddar cheese, diced bell pepper, diced onion, chopped chives, salt, and pepper.
